A good week
On Monday (18th), I began working (temp) at our church district office. It all started by my being available last week to clear up some computer trouble they were having. Due to this, I was asked to work the next two weeks in preparation for our district Assembly and Camp Meeting.
Monday started out great; arrived to work early and made copies of the district report pages all day. Routine and boring, but good work. Came home so tired.
Tuesday, went in to work late. Had to run home, after getting half way to work, to pick up something I forgot to take with me. Work was the same as Monday.
Wednesday, more of the same. Thursday - same and colating.
Today… we had volunteers arrive to help colate the book pages (107 pages) and start binding them. One was my mother and the other 2 were older ladies (Mary and Edna) from other churches on the district. We had a good time of fellowship, sharing and laughing with one another. My mother knew Mary and so they could talk about friends (nicely) when Edna and I couldn’t.
It was nice to be in the company of these ladies today, as well as Phyllis, my boss. They are so full of life, it made me feel a little ashamed that I do not always appear joyful, even in the tough times. It was a good thing for me, today, to have this little reminder: even when hurting, disappointed or discouraged, there is always something or someone that God has placed around you to either help you or for you to help them. I have been hurt this week, disappointed and discouraged, and God has placed these ladies in my life this week and they have been a great encouragement to me.
I am still disappointed and discouraged about things that have been happening at the church I attend, however, I now am prepared to still show God’s joy in my life throughout the day, regardless of how I “feel”.
Here’s a recipe:
Libby’s Chicken Salad
Uncooked chicken (your desired amount)
Real Mayonaisse (Kraft is my favorite)
Carrots (I use about 1 mini carrot per chicken breast)
Onion (I use 1/4 onion per 4 chicken breasts)
Celery (I use 1 stalk per 4 chicken breasts)
Grapes (I use a lot, you use as many as you’d like)
Pecans (I use a lot, you use as many as you’d like)
Dill Pickle juice (1 teaspoon per chicken breast)
Salt - to taste
Pepper - to taste
Boil your chicken, till done, in water seasoned with salt, pepper and any other seasonings you like to use with chicken. Let the chicken cool, then dice or chop to size you prefer. Dice/chop the carrots, onion, celery, grapes and pecans. Mix chicken, carrots, onion, celery, grapes and pecans together. Add just enough Mayonaisse to just hold it together, then add your pickle juice, salt and pepper.
This chicken is so good and with using your desired amounts to your own taste, it will become your own recipe, not mine.
